What is a mug cake?

This might seem like a silly question, but if you’ve never made one before, you’re probably thinking, “what the heck is a mug cake!?”

A mug cake is literally a single serving cake, made in a mug and cooked in the microwave. Basically the best invention ever!!

I wanted to create a super chocolatey vegan mug cake that was also incredibly simple to throw together when you need a chocolate fix and quick! I was testing the recipe when my twin 10 year olds got home from school one day last week, and they wanted to try making their own. They successfully followed the recipe and couldn’t get over how delicious they turned out! If a 10 year old can do it, I’m confident you can, too. 🙂

How to make a vegan mug cake

It’s so easy. Get a mug out of your cupboard. Add the dry ingredients to it and whisk or stir to combine: flour, cocoa, sugar, salt and baking powder.

Now add the wet ingredients: oil, non-dairy milk and vanilla. Stir with a spoon until combined. Sprinkle the chocolate chips on top, and microwave for 40-60 seconds. I prefer 40 seconds, because it’s nice and gooey in the middle at that point, but you could cook it a little longer if you want.

Yum, yum. Enjoy immediately as is, or you could add a scoop of vegan vanilla ice cream for a seriously tasty treat.

Chocolate Vegan Mug Cake

The best chocolate vegan mug cake out there! Super fudgy, moist and perfect anytime you need a chocolate fix, quick! Ready in 1 minute.

Ingredients 
 

  • 2 tablespoons all purpose flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon canola oil, melted coconut oil or vegan butter
  • 3 tablespoons non-dairy milk
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons dairy free chocolate chips

Instructions 

  • Add the flour, cocoa powder, sugar, salt and baking powder to a mug. Stir or whisk to combine.
  • Pour in the oil, non-dairy milk and vanilla into the mug with the dry ingredients and stir well with a spoon. Sprinkle the chocolate chips on top.
  • Cook in the microwave for 40 seconds. It will likely be a little undercooked in the middle at this point, which is my preference, but if you want it cooked more, microwave it another 10-20 seconds. 
  • Serve immediately.

Notes

  1. I think the mug cake tastes best with white flour, but you can use whole wheat flour, or a gluten free flour mix. I wouldn't suggest using all almond or coconut flour. 
  2. You can use natural cocoa powder or dutch processed. Either work fine for this recipe.
  3. Feel free to substitute coconut sugar for the regular sugar, or lower the sugar amount if you want a less sweet dessert.
  4. For the oil, you can use canola oil, melted coconut oil, vegan butter or any other oil you prefer. You could also substitute applesauce for oil free, but it will not be quite as rich tasting.

      1. I crave chocolate on my period and this is such a good solution, so I don’t have to make a full cake! So quick and easy and the perfect amount. Just had this topped with coconut whipped cream and lots of chopped strawberries and it was delicious. Could even imagine serving a version to guests it’s that good.

  3. Ummm so idk what happened I followed this recipe exactly…it’s still liquid. I tried microwaving it more but it exploded in the microwave (probably my fault). Where’d I go wrong?? Usually all my baking goes very well..

    1. Sorry to hear that! The cake is fudgy after it comes out of the microwave but does firm up once it cools down. If cooking it in the microwave is unsuccessful, you can always bake the cake at 350ºF for 8-10 minutes in an oven safe ramekin.

  6. This worked just fine for cooking in toaster oven in case anyone is wondering. I used more of a shallow bowl (just a regular ceramic cereal/soup bowl actually) and it cooked great. I also used cacao, which means need to use baking soda instead of powder. Here’s a good link re baking soda or powder when using natural cocoa or cacao vs. dutch processed.   8. This cake is SO GOOD and so easy. We topped with fresh raspberries after it was done and it was drool worthy. Am going to try putting a marshmallow down in the middle of the batter for my 4 year old tonight.

  9. Seriously the best cake of any I’ve tried to make since having to avoid 25+ foods. It has been such a hard journey finding any cake recipe, let alone one where my substitutions actually work and are mentioned in the recipe! I used all purpose white flour and coconut milk, topped with berries and coconut whipped topping (from aldi) and it was so delicious and handled the craving so well that I made 2 back to back.

  10. I used no coco although added 2 T of flour instead, used almond instead of vanilla extract and 1 T jam with 1/2 T strawberry jam instead of chocolate chips. The recipe is great although I have found this a good variation when I don´t feel like chocolate cake.

  11. My 5yo son is allergic to eggs so I bring a treat for him to every birthday party he attends. The first time I made this, I split it between two silicone cupcake liners, each in a mug with both microwaved at the same time. They came out beautifully and saved me having to make a whole batch of cupcakes to compensate for whatever would be provided at the party. He loved them. Tonight, I made one for myself. Delicious!

  12. Mug cake of my DREAMS. I have tried so many different recipes, tried to make my own, but this hit the spot. I think my problem is I always switch to GF flour and coconut sugar, but I still commit every time; and I did for this, and it is delicious! Looks just like the picture. Now I want a peanut butter version 🙂

  13. Best mug cake!! Bonus didn’t have any nuts in it which Is a struggle to find vegan nut free desserts. I did 1 min, which was perfect.. some local vanilla. Only thing is I personally would like less sugar. I’ll cut it down and see how it goes but don’t want to mess with the cake too much.

    Ps. If you’ve given up hope on a microwave desserts.. this is the recipe you gotta save!

  14. Brilliant recipe!
    I used only one tbsp of cacao powder, 1 tbsp of coconut sugar and used all purpose flour. I added maybe 1/2 a tbsp of choc chips because I didn’t want the cake to be too rich, topped with a serve of vegan vanilla ice cream. So good!
